Hard cheeses
Harder cheeses have a lower moisture content than softer cheeses. They are generally packed into moulds under more pressure and aged for a longer time than the soft cheeses.
Hard cheeses are aged cheeses. They are crumbly and dry and great for crumbling and grating.
Emmentaler is a yellow, medium-hard Swiss cheese that originated in the area around Emmental, Canton Bern. It has a savoury, but mild taste. Cheese mature longer time than semi-hard cheese. We sell Emmental with maturation of minimum 2 months. Emmentaler cheese has very big irregular holes what makes the cheese special and is one of the most famous cheese in the world. It comes in different shapes and formats. From 300g portion, 2,5kg loaf up to approx. 70kg wheels.
An Italian-style hard cheese has a rich, ripe flavor with a light hint of fruits and nuts. Rind of this cheese is treated with linseed oil during maturation and majority of the work is done manually. This uniquely wonderful cheese has a nice grainy, almost crystal texture.
Sheep cheese – Sheep cheese is made of 100% sheep’s milk and is ripening minimum 8 months during. This matured Gran Reserva cheese has a full flavour that is not too sharp or salty, but rather ripe and creamy taste. This exquisite speciality brings an exceptional food experience.
Goat cheese has very mild and creamy taste with the typical goat’s milk flavour. Its white and smooth texture, together with its unique taste makes this cheese one of the most favourable specialities among cheese lovers.
Smoked sheep milk cheese – After maturation cheese is naturally smoked on beech wood for minimum 24 hours. Natural smoke gives specific flavour and taste what makes this cheese one of the best cheese specialities in our range.
Mediterranean cheese is a hard cheese with rind made of cow’s, goat’s and sheep’s milk. Mixture of different milk types give to this cheese unique creamy taste and specific aroma. This cheese can be served as starter, but can also be served after meal with glass of wine.
